Meet Mira, a pint-sized (6" tall) psionic with the unique ability to manifest a normal-sized body using only her mind! Luckily for her, she's also an avid vorarephile, so she fits in just fine around here.
Current 'Default' Form: 5'6" tall, otherwise identical to her true form.
Mira's power, in detail:
Creation: Making a new body takes a lot of time and effort, usually several hours. Mira can make her manifested bodies different from her own in a few ways, but nothing extreme. Size difference is the most obvious and practiced adjustment, but minor anatomical changes are also possible. She cannot make a form wildly different from her own, such as an animal. While possible to have multiple bodies going at once, doing so takes more effort and energy so she rarely has more than one.
Function: To an outside (or, maybe, inside) observer, Mira's manifested bodies are virtually identical to her own when it comes to form and function, right down to internal organs and such. She feels everything the created body feels, can move or do other things with it as easily as with her true form. While capable of operating both her true form and her manifested form simultaneously, the more complicated the task the more difficult; having both bodies walk around is relatively easy, reading two books at once is not.
Digestion: Though Mira can manifest a body with mental energy alone, keeping it together over time requires an external source of energy. Mira's projected bodies can eat and digest things much like a normal body would, though the actual digestion process is remarkably efficient in turning food into energy. This is particularly helpful since it takes a lot of energy to keep a projected body going, with the end result being that a freshly made body would need to eat more than twice the normal amount that someone her size would. Over time these bodies start to become actual flesh and blood instead of just mental energy, requiring a bit less sustenance and even allowing for her true form to separate from it for periods of time.
Destruction: Though Mira can separate from a body at will, if abandoning it she will typically take several minutes to withdraw her psychic energy from the vessel. Freshly made / energy based bodies will dissolve into a wash of heat and light, while long-term bodies which had formed their own flesh and blood will be left catatonic if self-supporting, or be reduced to an organic mess if not.
Protection: Aside from manifesting entirely new bodies, Mira can also sheathe her true form in an invisibly thin layer of protective psionic energy. While far from invincible, when active this makes her tiny body far more resilient than would otherwise be the case. This can also provide a sort of 'life support' function, drawing energy from her manifested form so that her true body needs less food or oxygen.

-Captive! Mira's true form is accidentally or intentionally swallowed, leaving her manifested body no choice but to stay close to her 'captor' until they're able and/or willing to let her out!
